Reggello Corsa Olio is an Italian extra-virgin olive oil produced in the hills of central Tuscany. The olives used for the oil come from groves located in the Val di Chiana and Valdarno areas, both of which are historically known for producing quality olive oils. The olives for Reggello Corsa Olio come from a combination of Frantoio, Leccino, Moraiolo, and Correggiolo varieties. The oil goes through an extensive process before it is ready for bottling and use. First, the olives are picked when they are at just the right level of ripeness and then sorted in the mill. Next, they are pressed using a method called “mild cold pressing”, which involves pressing the olives at a low temperature without the use of chemicals – a process that helps to protect their delicate flavors and aromas. After separating the oil from the paste, the oil is separated from the water and any residue using a centrifuge and then filtered. Finally, the oil is stored in stainless steel tanks and aged to further develop its flavor. Reggello Corsa Olio is a mild and delicate oil with notes of artichoke, tomato, basil, and black pepper. It has a balanced flavor, with a sweet and herbaceous aroma and a gentle, rounded finish. It is best used as a finishing oil in salads, drizzled over cooked meats and vegetables, or in sauces or marinades.
