Queijas, also known as Portuguese custard tarts, are a beloved national delicacy in Portugal. Queijas are a type of pastel de nata, or Portuguese custard tart, and are most commonly known for their flaky and buttery puff pastry and creamy custard center. Queijas are traditionally made with egg yolks, sugar, cinnamon, cream, and a hint of lemon zest. The creamy center is then baked in large circular pans with a thin layer of the puff pastry. The origins of queijas date back to the 18th century when they were first made at the Jeronimos Monastery in Belém, Lisbon. It was here that monks first began creating pastries from egg yolks, sugar, and cinnamon that were used as a way to honor their Catholic faith. From there, this unique pastry began to spread throughout Portugal and quickly became a go-to favorite amongst locals. Today, Queijas are a common treat found throughout Portugal, from bakeries in downtown Lisbon to corner café’s in the countryside. The pastries have also traveled abroad, with several variations of the classic tart being popular amongst Portuguese expats.
