Oxtail comes from the tail of a cow, although other animals such as sheep and pigs may contribute to the overall oxtail supply. It has become an ingredient popular in many dishes across the world, often found in Caribbean, European, and African cuisines. Oxtails are rich in flavor, specifically in fat and collagen, which gives off a gelatinous texture.
